Pansy Catalina Ho Chiu-king was born on August 26, 1962, in Hong Kong. She is the eldest of five children of Stanley Ho, a prominent businessman known as the "King of Gambling" in Macau, and Lucina Laam King Ying. Ho received her early education in Hong Kong, attending St. Paul's Convent School, and later pursued her studies in the United States, where she attended Castilleja School in Palo Alto, California, and Santa Clara University, graduating with a bachelor's degree in marketing and business.

Ho's career began with a brief stint in the Hong Kong entertainment industry. She appeared in the TVB series *Breakthrough* in 1981. At age 26, she launched her own public relations firm, Occasions, showcasing her entrepreneurial spirit. She is the chairperson of MGM China Holdings Limited and has a substantial ownership stake in MGM Grand Macau.
