Jeremy Maurice Jacobs Sr. was born in Buffalo, New York, on January 21, 1940. His parents were Genevieve and Louis Jacobs. His father and uncles founded Jacobs Brothers, which later became Delaware North, starting as a concessions business. Jeremy Jacobs Sr. earned a Bachelor of Science degree from the State University of New York at Buffalo School of Management and attended the Harvard Business School Advanced Management Program.

Jacobs took over the family business, Delaware North, at the age of 28 after his father's death in 1968. Under his leadership, Delaware North expanded into a global powerhouse in hospitality and food service. His business acumen led to significant growth and diversification. In 1975, Jacobs purchased the Boston Bruins, further solidifying his influence in the sports industry.
